Banana Muffins

Ingredients:

3 ripe bananas, mashed

3 eggs, beaten

2 Tablespoons melted coconut oil

½ cup maple syrup (or coconut sugar)

2 ¾ cups almond flour

¼ teaspoon salt

1 ¼ teaspoons baking soda

1 cup chopped dark chocolate or chocolate chips (I supposed this is technically optional, but is it really??)

Heat oven to 350° and prep muffin pan with liners or a swipe of coconut oil.

In a large bowl, mix the bananas, eggs, oil, and maple syrup or coconut sugar. Add in the almond flour, salt, and baking soda. Add the chocolate and stir to combine. Distribute the muffin batter evenly into the muffin pan, filling each about two-thirds of the way full. Bake for around 20-25 minutes –check for doneness as ovens can vary. Let cool and enjoy!
