Grain-Free Banana Avocado Brownies

Ingredients

1 large avocado (140-150 grams of pulp)

1/3 cup unsweetened sunflower seed butter (or other favorite seed or nut butter)

2/3 cup unsweetened almond milk (can also use dairy milk, hemp milk, etc.)

2 tablespoons ground flaxseed

1/3 cup and 1 tablespoon unsweetened cocoa powder

3/4 cup coconut sugar

1 1/2 teaspoons vanilla extract

1/2 teaspoon salt

1 teaspoon baking soda

1/3 cup green banana flour

1/4 cup dark chocolate chips (optional but recommended)

  1. In a mixing bowl with an immersion blender (or in a food processor), blend all ingredients except for the banana flour, baking soda, and chocolate chips. It will be a pudding-like consistency. If using a food processor, pour the mixture into a mixing bowl.

  2. Using a spatula, stir in the banana flour and baking soda and mix well.

  3. Spread batter into an 8x8 brownie pan that has been lined with parchment paper. Top with dark chocolate chips, if using.

  4. Bake at 350° for 23 to 24 minutes.

  5. Let cool completely and enjoy!
